Eggless vanilla sponge cake in microwave

Here am going to show you a wonderful eggless vanilla sponge cake, that too in microwave.I really wonder how a microwave can give such a soft and smooth cake.But here you can see it.I was searching for a long time to get a cake recipe in microwave,at last i got the recipe from a blog, madhurasrecipe.com.




Ingredients
      2 tbsp Butter (room temp)
          2 tbsp yoghurt
          1/2 cup Sugar
          3/4 cup Warm Milk
        1 cup Maida
         1/2 tsp Baking powder
         1/4 tsp Baking Soda
         1/2 tsp Vanilla Essence
         Sugar syrup – 3tbs

For whipping cream

         Dream whip – 1 sachet


 

        Milk – ¼ cup
    Powdered sugar – 2tbs
       Vanilla essence – 1/4tsp
   
     Method

  
     In a mixing bowl add  butter,sugar  and yoghurt , in the original recipe cheese is used  instead of yoghurt.Whisk all these ingredients  together till creamy.


     Slowly add warm milk to the mixture and combine well,then add  vanilla essence.



     Sieve maida,baking powder and baking soda to the wet mixture.Mix well without any lumps.



     Pour the mixture to a  greased microwave safe dish.

     Microwave over high for 4minutes(1100 W oven,),my oven is  900W oven,so it took 8mins to cook).Power settings for each microwave varies.

     Insert toothpick at the center of the cake, if it comes out clear cake is ready.

     When cake is done,allow it to cool for 10 mins.Then gently invert the cake into a dish.
    
       
  




      Now  in a cool bowl,add 1 sachet of  whip,powdered sugar , milk and vanilla essence.Beat it until soft and creamy with electric beater or using a whisk.
     
     

Take  the cake and pour 3tbs of sugar syrup over it,then apply the cream all over the cake.Then top with any fruits you,like.I had only mango with me,so I used mango slices to top.




       Enjoy this sponge cake.
