Red Velvet Cake for Christmas

Christmas Special!!!

Recipe source : Laura in the kitchen






Ingredients


All purpose flour/Maida –1 ¼ cup

Baking powder – ½ tsp

Baking soda – ½ tsp

Cocoa powder – 2tbs

Salt – 1/4tsp

Unsalted butter – 60gm(softened at room temp)

Granulated sugar – ¾ cup

Egg – 1

Vanilla essence – 1tsp

Milk – ¾ cup

Vinegar/Lemon juice – ¾ tsp

Red food color(liquid)

Whipping cream – 1 cup from 1 sachet


Directions


1.Preheat the oven to 180C.


2.Take a cup and add ¾ cup of milk and ¾ tsp of vinegar or lemon juice to it and keep it for 5 mins.This is a substitute for buttermilk.If you have buttermilk omit this step.


3. Sift together the flour, cocoa powder, baking powder, baking soda and salt and keep it aside.


4.Take a mixing bowl ,take softened butter and sugar and beat it,then add the egg and vanilla, mix it until combined.


5.Now add the half sifted ingredients and half buttermilk to it and mix it,again add the other half dry ingredients and buttermilk.Combine all together without any lumps.


6.Using a spatula mix the batter again and add enough food color.


7.Now scoop the batter evenly  in the cake cups  or lined muffin pan and bake for 15-20 mins or until a toothpick inserted in the center of the cupcake comes out clean.aAllow the cupcakes to cool.


(You can easily make 12 cup cakes from this batter,I made 6 cup cakes and one small cake.)


8.Whip the cream and top the cupcakes with whipping cream and cool it in the fridge for 10-15mins and have it.
