Chicken Puffs with Mozzarella cheese




Puffs can be made with several types of filling. But my most favorite is this spicy chicken filled puffs. The filling can be mixed veggies, egg or meat.Crunchy chicken Puffs with a cup of tea in the evening...unbeatable!!!!

Puffs are my husband's all time favourite snack.He always missed the kerala style flaky puffs.So i thought of making  for him at home.I came across the recipe for Chicken Puffs at savory and sweet food.But in her blog  it was chicken pinwheel puffs,i made it as rolls.And i made slight changes to my recipe. 

Mozzarella cheese gave extra flavour to the puffs and puffs turned out really well.Really i am very very happy that he loved the puffs a lot.These chicken puffs are light, crisp, flaky and spicy,an awesome starter for any occasion.






Ingredients


For the filling


Boneless chicken – 200 g

Oil – 3 tbs

Finely chopped onion – 1 big

Finely chopped ginger –  2 tsp

Finely chopped garlic –  2 tsp

Chopped green chilli – 2

Chopped tomato – 1 small

Turmeric powder – ¼  tsp (plus ¼ tsp)

Chilli powder – 2 tsp (plus 1 tsp)

Garam masala – ½ tsp

Tomato sauce – 2 tsp

Chilli sauce – 1 tbs

Chopped coriander leaves – 1 tbs

Salt as per taste


1 Sheet puff pastry roll/ Puff pastry Squares(10 nos)

All purpose flour

Melted butter – 3 tbs

Chilli sauce – 3 tbs   

Mozzarella cheese as required

Egg wash – 1 egg with 1 tbs of water


Method










1.Clean and cut the chicken into medium size and cook the chicken with 1 tsp chilli powder, ¼  tsp turmeric powder,salt and required water until soft and tender.
 

2.Drain  and shred the chicken.


3.Heat oil in a non stick pan and add the chopped onion & salt and saute it till brown color, then add chopped ginger,garlic and green chilli sauté it for 3 mins.Then add the chopped tomato and sauté it till soft.


4.To this add turmeric powder,chilli powder and garam masala.Mix it and sauté it for a minute.Then add the shredded chicken,tomato sauce and chilli sauce.Stir fry for few minutes and finally add the chopped coriander leaves.


5.The puff pastry sheet needs to be thawed before using. So, either place into the refrigerator and leave overnight or remove and thaw at room temperature for 30 minutes.


6. If  you are having sheet puff pastry roll,defrost and cut into 10 equal squares.I am using puff pastry squares.



7. Cover work surface with flour and take each square puff pastry and brush with melted butter and then spread the chilli sauce over it.Then add the filling to one side then on the top of it add mozzarella cheese.Roll the pastry and lightly brush with egg wash or butter on each roll.


8.Make slits on the top of the puff pastry and place these on a lined baking sheet.


9.Preheat the oven to 220 degree C and bake it for 15 – 20 mins or until golden brown.





Serve these delicious chicken puffs with a cup of tea.

Moist Carrot Cake






A simple,very light,flavorful carrot cake with grated carrots.This is one of my favorite cake. It is full of flavor and ultra moist cake.Always carrot cakes are frosted with cream cheese.But i like to have as it is.This is a must try recipe.Please do try and let me know how you feel.

 

Ingredients

All Purpose Flour – 1 ¼ cup + 1 tbs
Sugar – ¾ cup
Baking Soda – 1 tsp
Cinnamon powder – 2 tsp
Salt – ½ tsp
Vegetable Oil – ¾ cup
Eggs - 2
Vanilla Extract – 1 tbs
Grated Orange Zest – 1 tsp
Grated Carrots – 1 ½ cup
Raisins – ½ cup


Method

1.Preheat your oven to 180 degree C.

2. In a bowl toss together the carrots, raisins and the 1 tbsp of flour until all of the carrots and raisins are coated with the flour.

3. In a large bowl,add sugar,oil and eggs whisk it until well combined.Then add flour,cinnamon,baking soda,salt,vanilla extract and orange zest,combine well without lumps.

4.Add the carrots and raisins and mix until they are well incorporated through the batter.

5. Pour the batter into the prepared baking pan and bake for about 30 minutes or until when a toothpick inserted at the center of the cake comes out clean.

6. When the cake is ready, let it cool completely.




Cut it into pieces and serve this super moist delicious cake.A perfect snack with a cup of tea...

Cinnamon Rolls With Orange Glaze

Ingredients


Dry yeast – 1 tbs

Warm water – ¼ cup

Granulated sugar – 1/4cup + 1 tsp

Egg – 1

Milk – ¾ cup

Salt – 1 tsp

Melted unsalted butter – ¼ cup

All purpose flour – 4 cups

Melted Butter, to brush over the top before baking


For the filling


Unsalted butter – 1/3 cup at room temp

Brown sugar –  ¾ cup

Granulated sugar – ¼ cup

Cinnamon powder – 1 tbs

Raisins – 2 tbs (optional)


For the orange glaze


Orange juice – ½ cup

Powdered sugar – 5 tbs


Method



 



 

 

 

 






1.In a small bowl, combine the warm water and 1 tsp of the granulated sugar, sprinkle the yeast over the top and let it sit for about 5 minutes.


2. In the bowl of a standing mixer/electric beater fitted with a dough hook, mix the milk,egg, sugar,melted butter,salt and vanilla.


3. Then add yeast mixture and mix well then add 2 cups of the flour and mix until its all incorporated and slowly add about 2 more cups of flour. Turn the speed up to medium and let it mix for about 5 to 7 minutes or until you have a smooth dough.
 

4.Take the dough out of the mixer and pull it together with your hands to form a ball.Or if you don’t have a beater or standing mixer,you can mix all the ingredients in a bowl and turn into a floured surface and knead till smooth and elastic.


5.Oil a large bowl with some vegetable oil and place the dough in it and again oil the top of the dough with a little vegetable oil. Cover with plastic wrap and place it in a warm place (you can place it in the oven) to rise for about 2 hours.


6.For the filling mix together the brown sugar, granulated sugar and cinnamon and set aside.


7.After 2 hours take the dough outside and roll it out onto a floured surface into a rectangle shape.


8. Spread the soft butter over the top and sprinkle the cinnamon mixture evenly then spread the raisins. Now start to roll the dough tightly from the longer side and cut it into 12- 14 pieces.


9. Now place them cut side down in a well buttered  baking dish and again cover it with a plastic wrap and put them back to a warm place to rise for 1 hour.


10. Preheat your oven to 180 degree C.


11. Once risen, brush them with some melted butter and bake them for about 25-30 minutes or until golden brown.While baking your house smells heavenly.


   12.For the orange glaze, in a small bowl add powdered sugar and stir in enough orange juice to make a glaze of drizzling consistency.


 Have this delicious cinnamon roll with a cup of coffee...
