Mango & Custard Verrines



Verrines can be sweet or savory and can be anything from an appetizer to a dessert which is layered in a small glass.This is a 4 layer dessert with vanilla custard and mango.A very simple delicious dessert.Custard and mango combo makes this dessert yumm!!!!




Ingredients


Milk – 1 cup

Custard powder – 1 ½ tbs (mixed with little water)

Sugar – 5 tbs( adjust according to your taste )

Unflavoured gelatin   – 1 tsp

Ripe mangoes – 2

Cherry -2


Method

1.In a small bowl take 2 tbs of chilled water and sprinkle gelatin powder and leave it for few minutes.

2.Take a sauce pan and add milk and sugar,bring to boil over a medium heat.When it starts to boil,add the custard mixture and stir continuously until mixture becomes thick.

3. Remove the mixture from the heat and allow to cool.And pour half of the custard mixture into two serving dishes and keep it in the freezer for 5 mins.

4. Meantime take 1 mango and make mango pulp(make sure the mango is fully ripen and soft),blend mango with little water until smooth.(Use quality mangoes,it gives better taste)

5.Microwave soften gelatin for 30 seconds and stir it until gelatin melts.Then add the gelatin mixture into the thick mango pulp and mix it well.

6.Take out the custard from the freezer and pour half of the mango pulp on the top of  the custard and freeze it for 5 mins.Again do the same procedure.Thus it makes 4 layers.





7.Garnish with chopped mango and cherry and then refrigerate it.

Badusha


Badusha is a famous  South Indian sweet made with all purpose flour and sugar.In North India this sweet is known as Balushahi.It is having a flaky texture coated with sugar syrup.Usually this is made during diwali.I got this tempting and easy recipe from "lovefromkitchen" by Nawal.



Ingredients


All purpose flour – 2 cups

Baking powder – ½ tsp

Baking soda – a pinch

Powdered sugar – 1 tbs

Salt – a pinch

Butter/Ghee – 75g(at room temp)

Yogurt – 1 tbs

Cardamom powder – ¼ tsp

Water – to knead

Oil for frying


For syrup


Sugar – 250g

Water – 1 cup


Method


1.Take a bowl and sieve flour,baking powder,baking soda,powdered sugar and salt.


2. Then add butter/ghee,yogurt,cardamom powder and crumble altogether with hand,then add water and knead into a dough till soft and stops sticking,Cover the dough and keep it aside for 30 minutes.


3. Prepare the sugar syrup by boiling  water and sugar till it reaches one string consistency.


4.Take the dough and make small size balls and flatten them. Make a small depression at the center of the flattened dough and deep fry them until golden brown colour.


5. Remove from the oil and  soak them in the sugar syrup till the next batch is ready.


6. Now remove the badusha from the sugar syrup and serve this sweet, hot or chilled.



Garnish with almonds,cashews or with saffron strands…

Biscuit pudding with coffee & cinnamon


This is a very easy and yummy dessert.Those who like cinnamon flavour will definitely love this.The Marie  biscuits absorb the coffee and sweet milk mixture making it almost cakey in texture.This is one of my favourite pudding.Second day this tastes better.Do try this delicious dessert.





Ingredients    
             

Marie biscuit - 24 nos

Milk - 3 cups

Condensed milk - 1/2 tin

Corn flour - 4 tbs

Cinnamon powder - 2-3 tbs

Instant coffee powder - 1 tsp

Water – 1 cup

Whipping cream – 1 cup 


Method

1.Boil the milk ,when it reached the boiling point, add condensed milk and keep stirring. 

2.Add cornflour, mixed with 1/4cup of milk and keep stirring.

3.When the desired thickness has reached, add cinnamon powder and mix it well.

4.Remove the milk pan from stove and allow it to cool.


5. Boil water, add coffee powder and stir.


6. Take a pudding dish,dip the biscuits in warm coffee one at a time and arrange.


7. Spread the thick milk mixture over the biscuit layer and repeat covering the layer with more biscuits in a similar manner till all the biscuits are finished.


8.Top with whipped cream and refrigerate it.




 Dust with cinnamon powder and serve this yummy dessert.

Eggless Chocolate Cake with chocolate ganache


This yummy eggless chocolate is very simple to make,just mixing of both wet and dry ingredients.This cake has a moist and tender crumbs with rich delicious creamy chocolate frosting....yummm!!!Every chocolate lover's will love this.. Make this yummy chocolate cake for your loved one...

Ingredients


All Purpose flour –  1 ½ cups(195 g)

Cocoa powder – ¼ cup (25g)

Baking powder – 1 tsp

Baking soda – ¾ tsp

Granulate sugar – ¾ cup(175g)

Salt – ¼ tsp

Oil/Melted butter – 1/3 cup (80ml)

Warm water – 1 cup (240 ml)

Vanilla extract – 1 tsp

Lemon juice/Vinegar – 1 tbs


Chocolate Ganache Frosting


Semisweet chocolate/Semisweet chocolate chips – 150g

Heavy whipping cream -  3/ 4 cup

Butter – 1 tbs 


Method 


1.Preheat the oven to 180 degree C.


2.In a bowl sieve flour,baking powder and baking soda then add salt and stir it.


3.In another bowl add the sugar and warm water,mix it,then add oil/butter to it and pour this mixture to the dry ingredients and whisk altogether and make a smooth batter.


4.Then add vanilla extract and finally lemon juice ,mix it.


5.Pour the batter in a greased square or round cake tin and bake it for 20-25 mins or until a toothpick inserted at the center of the cake comes out clear.


6.When the cake is fully baked ,allow to cool for 10 mins and then run the knife around the sides of the cake and invert it.


7.In a bowl put the chocolate/chocolate chips and keep it aside. In a saucepan add heavy cream and butter,bring to boil over medium heat.Switch off the flame.


8.Pour the mixture over the chocolate and allow to stand for 5 mins.Then stir it until smooth.When it gets cooled pour the mixture over the top of the cake or if you need a thick ganache,keep it for some more time.




Garnish with fresh strawberries...
