Eggless vanilla cake for valentine's day


14th february is right around the corner, many of us get into the spirit of Valentine’s Day and do a little something extra to tell our loved one how much we love them. So here is a simple heart shaped cake for this valentine's day...Enjoy with your loved one...

Ingredients

For the cake

All purpose flour –  2cups(260g)

Baking powder – 1 tsp

Baking soda – 1 tsp

Salt – ½ tsp

Sugar – 200 g

Oil – 120 ml

Warm milk – 120 ml

Warm water – 120 ml

Vanilla extract – 1 tsp

Lemon juice – 1tbs

Whipped cream frosting

Heavy whipping cream – 2 cups

Vanilla extract – 1 tsp

Granulated sugar – 3tbs

Butter cream frosting

Unsalted butter – 50 g at room temp

Icing sugar/ Powdered sugar – 100g

Vanilla extract – ¼  tsp

Milk – 1 -2 tbs

Food color(red and green)

Method

1.Pre-heat the oven to 180 degree C.


2.In a bowl sieve flour,baking powder and baking soda then add salt and mix it.


3.In another bowl add the sugar and warm milk,mix it,then add oil to it and pour this mixture to the dry ingredients and whisk altogether and make a smooth batter by adding the warm water.


4.Then add the vanilla extract and finally lemon juice ,mix it.


5.Pour the batter in two greased cake tins and bake it for 20-25 mins or until a toothpick inserted at the center of the cake comes out clear.


6.When the cake is fully baked ,allow to cool for 10 mins and then run the knife around the sides of the cake and invert it.


7.In a mixing bowl place the whipping cream, vanilla extract, and sugar and stir to combine. Cover and chill the bowl and whisk in the refrigerator for at least 30 minutes, then beat the mixture just until stiff peaks form.



8. In the bowl beat the butter until smooth and creamy.Beat in the vanilla extract. With the mixer on low speed, gradually beat in the sugar. Add about 1-2 tablespoons of the milk and beat to combine. Then, on high speed, beat frosting until it is light and fluffy .Add more milk or powdered sugar, as needed, to get the right consistency. 


9.Divide the butter frosting into two bowls and color the frosting with red and green.


10.Place one cake layer bottom side facing up on your serving plate and spread with about 3/4 cup of whipped cream. Place the other cake layer bottom side facing up on top .Cover the entire cake with the remaining whipped cream.


11.Now decorate the cake with butter frosting as you like.
