American Sponge Cake With Strawberry Frosting

 A very special cake for my husband...


This cake was made with love.I made this cake for my husband's birthday.I was very excited when he said he like to have one more piece.He loved the sponge and light texture of the cake with strawberry flavour.American sponge cake is super moist,very light ,spongy and also it doesnot contain any solid fat.As with a lot of sponge cakes, this American sponge cake gets most of its rise from the air whipped into the eggs.




This cake is just like the cake we buy from the cake shop.Sponge cake with fresh strawberries and cream will just melt in you mouth.It is a delightful dessert.It was my dream to bake a cake which is having the taste similar to a shop bought cake.I was very happy...tastes almost the same.You can make this cake for any celebration.

American Sponge Cake With Strawberry Frosting





Ingredients

For cake

Egg whites – 6
Egg yolks – 6

Vanilla extract – 1 tsp

Water – 2tbs

Lemon /Orange zest – 1 tbs

Granulated sugar – 160g

All pupose flour – 80g (8 tbs)

Corn flour – 20g (2 tbs)

Baking powder – ¼ tsp

Salt – ¼ tsp + a pinch

For syrup
 
Sugar – 5 tbs

Water – ¼ cup

Strawberry syrup- ½ tsp

Rose water – 2 drops

For layering and frosting


Strawberry jam – 1/3 cup
Fresh strawberries – 8-10

Heavy cold whipping cream – 500ml

Vanilla extract – 1 tsp

Granulated sugar – 5 tbs

Strawberry syrup- ½ tbs

Red/pink food color – 1 drop

Method


For the cake



1.Preheat the oven to 180 degree C.Grease and line the bottom of the springform pan/tube pan with wax paper or parchment paper.This will support the cake and helps to remove the cake easier. 

2.In a bowl, sift both the flour,baking powder and salt and set aside.

3. In a large bowl, using a electric hand mixer, beat the 6egg yolks along with 100g(1/2 cup) of sugar, until they become thick and fluffy.It will take several minutes.Long beating time is necessary for getting the cake its full volume.If it is too hard to beat,add 2 tbs of water in between.Then beat in vanilla extract and lemon zest.

4.Again sift half the flour mixture over the egg mixture and fold in gently with a wooden spoon or rubber spatula.Sift the remaining flour into batter and gentle mix everything together until the flour is incoperated.

5. In a separate clean bowl, add the egg whites and a pich of salt and beat until foamy. Gradually beat in 60g of sugar and continue to beat until the egg whites develop stiff peaks.

6.Add a little of the egg whites to the batter and fold in gently then add the rest of the egg whites and gently fold in altogether.Do not over mix the batter.

7.Pour the batter into the springform pan /tube pan.In the original recipe tube pan is used,so that cake reaches its full volume and the hole in the middle of the pan allows the hot air to circulate and reach the center of the cake(from joy of baking). I had springform pan with me,so I used that.Only height of the cake differ.

8.Now smoothen the top of the cake with a spatula and bake for 25- 30 mins or until a toothpick inserted at the center of the cake comes out clear. 

9.When it is fully baked, remove from the oven and run a knife around the sides of the pan and then remove cake from the springform pan and invert the cake into a greased wire rack or sprinkle the top of the cake with confectioners sugar and invert it,so that cake do not stick.Now gently run the knife around the bottom part of the pan and take off the pan and wax paper.Cake is slight sticky,it is normal.

10.Before layering the cake,cover and refrigerate the cake for few hours,so that you can divide the cake easily.This cake is very soft and spongy.


For sugar syrup

1.Take sugar and water in a sauce pan and boil till sugar melts.


2.Then allow to cool and add strawberry syrup and rose water.This gives the cake a different taste.


For layering and frosting


1.Melt the strawberry jam and keep it aside.



2.Wash and slice the fresh strawberries.

3. In a mixing bowl place the whipping cream, vanilla extract, and sugar and stir to combine.Make sure bowl,whisk and whipping cream is cold. Then beat the mixture just until stiff peaks form.

4.Take 1 ½ cup of the whipped cream and mix with strawberry syrup and food color.







5.Using a sharp knife divide the cake into two.Apply sugar syrup on the cake and fill it with jam,then  take  ¾ cup of whipped cream and spread it evenly.Layer with fresh strawberries over the cream.Then place the other portion of the cake and gently press it.Again apply sugar syrup and spread the strawberry whipped cream over the top and sides of the cake.And decorate the top of the cake as you wish.
