Blueberry butter cake with streusel topping

 I was searching for some nice recipes with blueberries,while searching i got this amazing cake recipe from Joyofbaking.com.
Absolutely delicious cake.


 

This Cake is having three layers,first layer butter cake,second blueberries and third cinnamon flavored streusel .Fresh blueberries are sandwiched between a layer of  butter cake and streusel topping.Both soft blueberries and crunchy streusel topping gives extra richness and flavour to the cake.I love it...




 


Ingredients


Streusel topping

All purpose flour – 45g
Granulated sugar – 65g
Cold unsalted butter – 56g(cut it into small pieces)
Cinnamon powder – ½ tsp

Cake batter

All purpose flour – 130g
Salt – ¼ tsp
Baking powder – 1 tsp
Granulated sugar – 100g
Unsalted butter at room temp – 56g
Egg – 1
Vanilla extract – ½ tsp
Milk – 80 ml
Fresh blueberries – 150-200g

Method

1.Preheat the oven to 180 degrees C.Grease the baking tray with butter or place a foil paper,so that cake won’t stick.

2.For the cinnamon flavoured streusel topping,take a bowl mix together flour,sugar and cinnamon powder,then add the small butter pieces.Using your finger tips or pastry blender make the mixture to a coarse crumbs and keep it aside.

3.In a bowl, take the flour,baking powder and salt,then whisk all together.

4.In a seperate bowl,using a whisk or electric mixer beat the butter until creamy,then add the sugar and beat it again until smooth and fluffy.

5.Add egg and vanilla extract,beat again.Then add the flour mixture and milk alternately and mix it until combined.Don’t over mix it after adding the flour,if so the cake will be hard.

6.Spread the batter onto the baking dish with the back of a spoon or spatula,then on the top of the batter evenly spread the blueberries and finally sprinkle with the streusel topping.

7.Bake for 40-50 mins  or until a tooth pick inserted at the centre comes out clean .Take out from the oven and allow to cool.




Cut it into pieces and serve this rich cake as you like.You can have it as warm,room temp or cold.
