BBQ Pulled Chicken Sandwich





 BBQ Pulled Chicken Sandwich is always perfect for dinner.Using the slow cooker method seals in moisture, making this one tasty,flavourful and delicious sandwich. Pulled chicken should be piled high on a bun that does nothing more than give you the ability to hold the sandwich.Please all try this delicious recipe and know the taste.

Ingredients


Boneless chicken thighs or chicken breast – 500g

Sliced Onion – 2 medium

Chilli powder – ½ tsp

Garlic powder – ½ tsp

Onion powder – ½ tsp

(If you don’t have garlic and onion powder,make a paste of both)

Pepper powder – 2 pinches

Salt – ½ tsp

Vegetable oil/Sunflower oil – 2-3 tbs

Chicken stock/Water – ½ cup

Barbeque sauce – 2tbs(Use good quality BBQ sauce or use homemade BBQ sauce(click here to get the recipe),I used shop bought one,so added only 2-3tbs,if it is homemade add upto ¾ cup of sauce or according to your taste)


Chilli sauce – 2tbs(optional,if you are adding home made BBQ sauce)


For Coleslaw


Mayonnaise – 3tbs

Shredded cabbage – 1 cup

Shredded carrot – 1 cup

Sugar – ¼ tsp


Buns

Cheese slice (optional)


Method


1.First prepare the coleslaw,In a bowl take the mayonnaise and sugar mix well ,then add the shredded cabbage and carrot to it and stir it.Refrigerate it atleast for half an hour.


2.Take all the dry spices and mix well then sprinkle all over the chicken or if you are using onion and garlic paste,take all the other dry spices and salt and mix along with onion and garlic paste and marinate the chicken.


3.Heat oil in a large non-stick skillet,add the chicken pieces and cook them for 3-4 minutes on both sides or until golden brown color using medium heat.


4.Remove the chicken from the skillet and add the sliced onion and cook the onions till soft. Then add the chicken and chicken stock or water to the soft onion.Cover it with a lid and cook them for 10 mins or until the chicken pieces get fully cooked.


5. Switch off the flame and remove the chicken from the skillet onto a plate and allow to cool.Then shred the chicken with your hands or using two forks.
   

6.Again transfer the chicken back to the same pan and add barbecue sauce .Then cover and cook it for  4-5mins. 


7.Take the bun,cut it into two halves.Place the cheese slice(optional) then the shredded chicken covered with bbq sauce(yummmm!) ,coleslaw and the other half bun.





Now you can have the juicy,tender, delicious bbq pulled chicken sandwich…
